Knife peeler MS-1T: perfect for beetroot
Mr Gérard Cormorèche in the French village of St. Bonnet sur Mure has grown beetroot for years. Until 2000 he sold his harvest to a processing company. But in 2000 Cormorèche decided to undertake the peeling, packaging and marketing of his own harvest. He now has twelve employees processing 2,000 tons of beetroot annually. In mid-2007 Cormorèche decided, on the basis of quality, to purchase the Sormac knife peeler MS-1T. Currently the peeling capacity of this machine lies at one ton nett per hour, but at Cormorèche they are convinced that they can achieve a ton and a half or even two tons per hour.
After being precooked briefly, the beetroot, which have a reasonably hard skin, are peeled in the Sormac knife peeler. The sophisticated peeling technology of the MS-1T ensures :
> a completely peeled, smooth product
> a low peel loss
> a low micro-organism loading of the surface
After vacuum packing and sterilisation, the beetroot from Cormorèche look appealing and tasty. Just what the modern consumer wants to see.
